Winemaking:
Handpicked grapes. Direct pressing of crushed grapes and must clarification by sedimentation of free run juice. Fermentation at temperatures between 11°C and 20°C. Six-month wine maturation in stainless steel tanks on the lees. Secondary fermentation in tank by charmat method on temperature between 15°C and 20°C. Six months of ageing on lees.
Tasting notes:
This charmat method sparkling wine is showing lively pink salmon colour. The aroma is expressing an intensive smell of raspberries, sour cherry, and black currant.
A savoury taste with a good balance between acidity, sweetness and structure. Every day re-freshment.
