It ripens later and is considered a 'fickle variety', ripening well only in years when autumn is dry and warm. A slightly longer maceration period is suitable for a mature Barbera, and malolactic fermentation is an indispensable process. It ripens well in wooden barrels for up to two years and retains a distinctive fruity character.<\/em><\/p>\n<p><!--block--><em>Barbera Vipava is a mature wine with aromas of ripe black fruit and a hint of the ripening notes that have enriched the wine during its maturation in barrels.
