Penina Theodosius
It the time of the Roman Empire the great warrior Theodosius defeated his enemies in the Vipava Valley. For the 1600th anniversary of this battle we dedicated our first sparkling wine from the Vipava 1894 Wine Cellar to the conqueror - Penina Theodosius.
This semi-dry sparkler has a refined aroma that conquers hearts, especially that of women. In the glass, the bubbles playfully rise to form a fresh necklace at the brim.
Vintage: 2009
Variety: Welschriesling, Malvasia, Yellow Muscat.
Grape growing and winemaking details:
- Vineyard: Terraced vineyards.
- Harvest: A week prior to the regular harvest time – in the second half of August, at the beginning of September.
- Fermentation: The alcohol fermentation is followed by the secondary fermentation by the Charmat method.
- Maturation: 6 to 8 months sur lie.
Wine description:
- Colour: Green-yellow colour with golden shades.
- Nose: Intense bouquet with fruity and floral notes.
- Palate: Full, rich and sweetish flavour, a seal of maturity.
- Harmony: Elegant combination of freshness and maturity.
- Ageing potential: From 6 to 8 years.

- Alcohol: 12,5 %vol.
- Sugar content: 17,6 g/l of residual sugar.
- Total acidity: 9,5 g/l.
- Serving temperature: 6 – 8 ºC.
