Cabernet Sauvignon Ventus
Cabernet Sauvignon Ventus is a rich wine with a full and sweetish flavour complemented perfectly with tannins.
Vintage: 2008
Variety: 100 % Cabernet Sauvignon.
Grape growing and winemaking details:
- Vineyard: Terraced vineyards.
- Harvest: Very early for Cabernet Sauvignon; second week of September.
- Maceration: Eight days at temperatures below 28 ºC.
- Fermentation: At the same time as maceration, followed by malolactic fermentation.
- Maturation: In large 4,000-litre barrels made of Slavonian oak, 20% in French barriques.
Wine description:
- Colour: Intense red with shades of violet.
- Nose: From small forest fruits and sour cherries to hints of smoke and various floral scents.
- Palate: It has an intense flavour reminiscent of forest fruits and sour cherries. The varietal aroma and tannins match perfectly with notes of wood in which the wine matured.
- Harmony: Smooth velvety flavour and sweet tannins give this wine a gentle yet full character.
- Ageing potential: Up to 8 years.

- Alcohol: 12,5 %vol.
- Sugar content: Dry, 1,7 g/l of residual sugar.
- Total acidity: 5,2 g/l.
- Serving temperature: 16 – 18 ºC.
- Marriage of food and wine: Meat starters, venison, grilled beef, matured cheese (like Nanos cheese), kid meat in bilberry sauce.
